New! Organic recipes from Organic Farmers!

The Earth Dinner 2008 theme is "Respect the Earth: Meat in Balance and Moderation"

Part One - Organic Meat: Ingredient for Success

Thinking of meat as but one element in a main dish is an affordable, responsible way to include healthful animal protein and other nutrients in meals, and to make the move towards a more environmentally sensitive diet. It's also a way to please more people more of the time: The flexitarians at your table will welcome a choice that fits their philosophy of including some meat in their diet without always putting it at the center of the plate. And when you do showpiece an organic purchase, what better way to make use of the leftovers than by adding them to frugal soups, pastas, pizzas, and the like? Recipes from Terese Allen, Organic Valley Food Editor.

Part Two - Farmers' Choice: Organic Meat

April is the month of Earth Day, and the ideal time to remind ourselves that what we eat affects the health of our planet. To organic farmers, though, every day is Earth Day--so who better to inspire a celebratory Earth Day meal?

We asked six Organic Valley and Organic Prairie farmers from around the nation to share an ethnic tradition or a favorite family dish, but the catch was that it had to be use organic meat in moderate amounts -- something delicious enough to signal "special occasion" but not too fancy or costly. You'll find our farmers' choice recipes, along with their additional ideas for using organic ground meat, sausage, and other "small cuts," in this Organic Valley feature.
